Southern Fried Salmon Patties

1 teaspoon garlic powder
1/2 teaspoon paprika
Salt and pepper to taste
Oil for frying (vegetable or canola oil works well)
DIRECTIONS:

1. Prepare the Salmon:
Open the canned salmon and drain it thoroughly. Place the drained salmon in a mixing bowl and flake it evenly with a fork, removing any large bones.

2. Mix the Ingredients:
Add the finely chopped onion, cornmeal, flour, egg, and mayonnaise to the bowl. Then, add the finely chopped bell pepper, fresh parsley, garlic powder, paprika, salt, and pepper. Stir the mixture until it is well blended.

3. Form the Patties:
Shape the mixture into patties about the size of an average burger. Ensure they are compact to prevent them from falling apart during frying.

4. Fry the Patties:
Heat oil in a skillet over medium heat. Once the oil is hot, add the patties to the skillet. Cook until they are browned on each side, turning once during frying. This should take about 3-4 minutes per side.
