Lemon Bread

2 large eggs
1/2 cup sour cream or Greek yogurt
2 tablespoons fresh lemon juice
zest of one lemon
1 teaspoon vanilla extract
For the lemon glaze:

1 cup powdered sugar
2-3 tablespoons fresh Lemon Juice
Instructions:

1.Preheat your oven to 350°F (175°C). Grease and flour a 9 x 5 inch loaf pan.

In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Put aside.3. In a large bowl, beat softened butter and granulated sugar with a hand mixer or stand mixer until fluffy.
Stir in the eggs one at a time until everything is well mixed. Add sour cream or Greek yogurt, lemon juice, lemon zest and vanilla extract and stir until smooth.5. Gradually add the dry ingredients to the wet ingredients and stir until well combined. Be careful not to over mix.
Pour the dough into the prepared loaf pan and smooth the top with a spatula.7. Bake in the preheated oven for 45-55 minutes or until a toothpick inserted into the center comes out clean.
