TIPS FOR THE ROASTED PORK TENDERLOIN RECIPE
The pork tenderloins can be rubbed one day ahead and kept covered in the refrigerator. This will allow the delicious flavors of the seasoning to infuse the meat.
Use a cast-iron skillet to brown the tenderloins. It is great for even heat distribution. Make sure to preheat the skillet before adding the pork tenderloin.
Do not overcook: Pork tenderloin is a very lean meat. If overcooked, it can become dry.
Rest the tenderloins before slicing so the juices reflow into the meat and make it extra tender!
HOW DO WE KNOW WHEN THE PORK TENDERLOINS ARE DONE?
When roasting pork tenderloin, it should be roasted to a temperature of 145°F (62ºC), according to the USDA. Roasting your pork tenderloin to 145° F is a medium cook, which means it should be just a touch of pink in the middle, which is perfect for flavorful and juicy meat.

Leftover pork loin can be refrigerated for up to 3 days, or frozen in a freezer-safe container for three months. Reheat covered in the oven at 350ºF (175ºC) until heated through. Add a few drops of water to the bottom of the baking dish to loosen the juices.
