Wet Burritos

Instructions:

  1. Prepare the Beef Filling:
    • Heat the vegetable oil in a large skillet over medium heat.
    • Add the diced onion and cook until translucent, about 3-4 minutes.
    • Add the minced garlic and cook for another minute until fragrant.
    • Add the ground beef and cook, breaking it up with a spoon, until browned and fully cooked, about 5-7 minutes.
    • Stir in the taco seasoning mix, or use a combination of ground cumin, chili powder, garlic powder, onion powder, paprika, salt, and pepper if making your own seasoning.
    • If using, mix in the cooked rice and refried beans until well combined and heated through. Remove from heat.
  2. Prepare the Sauce:
    • In a medium bowl, combine the enchilada sauce, tomato sauce, water (or broth), ground cumin, chili powder, garlic powder, onion powder, paprika (if using), salt, and pepper. Stir well to combine.
  3. Assemble the Burritos:
    • Preheat your oven to 375°F (190°C).
    • Warm the flour tortillas slightly in the microwave or a dry skillet to make them more pliable.
    • Spoon some of the beef filling (with rice and beans if using) onto each tortilla. Sprinkle with shredded cheese.
    • Roll up each tortilla tightly and place seam-side down in a baking dish.
  4. Add the Sauce:
    • Pour the prepared sauce evenly over the top of the rolled burritos, making sure they are well covered.
    • Sprinkle additional cheese on top if desired.
  5. Bake:
    • Cover the baking dish with foil and bake in the preheated oven for 20 minutes.
    • Remove the foil and bake for an additional 10 minutes, or until the sauce is bubbly and the cheese is melted and slightly browned.
  6. Serve:
    • Let the burritos cool for a few minutes before serving.
    • Garnish with your favorite toppings such as sour cream, chopped cilantro, diced tomatoes, or sliced jalapeños if desired.
