Vegetarian Beef Soup

°1 Large Non-Rainy Can
°6 ounces tomato paste
°1 can (or intense tomato soup)
°2-3 potatoes
°4 c, peel and cut into cubes
°2 t beef base
°1 tbsp Italian sauce mixture or 1 tsp salt, 1 1⁄2 tsp oregano, 1⁄2 tsp pepper
°3 fresh or frozen mixed vegetable cups

*Preparation:

In a large saucepan, brown beef and onions until the beef is pink and the onion is soft. Drain the fat if you wish. Adding garlic and cook for 1 mn.
Add the stock, chopped tomatoes, tomato paste, potatoes, beef base and spice mix. Bring to boiling point. Reduce the heat, cover and simmer for 10 minutes. Add the mixed vegetables and simmer for 12-15 minutes or until the potatoes are cooked.
