Season the Egg Whites: In a bowl, beat the egg whites until frothy. Mix in the salt, pepper, paprika, and any additional seasonings you enjoy. These could be anything from a hint of rosemary to a special fries blend from the supermarket.
Coat the Potatoes: Slice the potatoes into the desired shape for fries and place them in a large salad bowl. Pour the seasoned egg whites over the potato sticks, ensuring each piece is well-coated. Use your hands to mix, ensuring even coverage.
Prepare for Baking: Preheat your oven to 220°C (428°F). Take a baking tray and line it with baking paper or parchment to prevent the fries from sticking.
Arrange the Fries: Lay the potato sticks out on the prepared tray. Make sure to space them well apart to prevent sticking and ensure they crisp up nicely.
Bake: Insert the tray into the preheated oven. After 10 minutes, check the fries and flip them to ensure they’re getting crispy on all sides. Bake for another 10-12 minutes or until they’ve achieved a golden brown crispness.
Additional Tip:
For an even fluffier inside, you can boil the potato sticks very lightly before coating them with the egg white mixture and baking as described. This step is optional but can add to the texture of your fries.
