Teriyaki Chicken and Broccoli

1 pound chicken breast, cut into small pieces
Salt and pepper to taste
2 tablespoons vegetable oil
2 cups broccoli florets
Sesame seeds (for garnish)
Cooked rice for serving
Steps:

TO MAKE TERIYAKI SAUCE:

Mix ingredients: In a small saucepan, combine soy sauce, water, rice vinegar, brown sugar, garlic and ginger.Heat over medium heat and stir until sugar is dissolved.
Thick Sauce: Add the cornstarch and water mixture to the pot. Stir constantly until the sauce thickens, about 2 minutes. Remove from heat and set aside.PREPARING CHICKEN AND BROCCOLI:
Season the chicken: Season the chicken pieces with salt and pepper.
Cook the chicken: Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 5 to 7 minutes.Remove chicken from pan and set aside.
Steamed broccoli: In the same pan, add the broccoli florets with a splash of water. Cover and let steam until broccoli is bright green and tender, about 3 to 4 minutes.
4.Combine: Add the chicken back to the pan with the broccoli. Pour the teriyaki sauce over the chicken and broccoli. Stir and make sure the chicken and broccoli are well coated with the sauce.

Simmer: Let the mixture simmer for a few minutes until everything is heated through and the sauce clings to the chicken and broccoli.Serving Suggestions:
Serve the teriyaki chicken and broccoli hot on a bed of cooked rice. Garnish with sesame seeds for a nutty taste and visual appeal.
For a complete meal, add miso soup or a small salad with a light vinaigrette on the side.
