PREPARATION:
In a large bowl, soak the lobster pieces in buttermilk for about 30 minutes to tenderize the meat.
In another bowl, mix together the flour, Cajun seasoning, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
Heat the oil in a deep fryer or large pot to 375°F (190°C).
Remove the lobster pieces from the buttermilk, allowing any excess to drip off. Dredge each piece in the seasoned flour mixture until well coated.
Carefully place the coated lobster pieces into the hot oil. Fry in batches to avoid overcrowding, cooking until golden brown and crispy, about 3-4 minutes per side.
Use a slotted spoon to transfer the fried lobster onto a plate lined with paper towels to drain any excess oil.
Serve hot with your choice of dipping sauces, such as remoulade, cocktail sauce, or a simple squeeze of lemon.
