Smoked Brisket Grilled Cheese Sandwich

Preheat a skillet or griddle over medium heat.

Butter one side of each slice of sourdough bread.

On the unbuttered side, layer cheese, brisket, caramelized onions, and BBQ sauce (if using).

Place another slice of cheese on top, then cover with a second slice of bread, buttered side up.

Cook the sandwiches in the skillet, pressing down gently with a spatula, until the bread is golden brown and the cheese is melted, about 3–4 minutes per side.

Remove from the skillet, slice, and serve hot.
