Place a skillet on the stove top and set it to medium-high heat. Adding cooking oil to cover the bottom of pan. When the oil is hot, brown the chicken on both sides, you don’t need to cook the meat through it.
Add the potato cubes and green beans to the bottom of the slow cooker, and stir to combine. Add chicken thighs on top of the potatoes and green beans. Add garlic. Drizzle over tomato sauce, then sprinkle with salt, pepper, thyme, and rosemary. Take a teaspoon and smear it around the sauce in an attempt to incorporate the spices into the sauce.
Cover and cook on high for 4.5 hours. Do not open the lid during the cooking time or the potatoes will not be cooked. Serve and enjoy!
