In a bowl, mix the diced chicken breasts with 1 cup soy sauce, corn sauce and black pepper. Let it rest for at least 10 minutes while you prepare the remaining ingredients.
Prepare the sauce:
In a small bowl, combine 3 tablespoons soy sauce, oyster sauce, hoisin sauce (if using), sesame oil, chicken broth, and sugar. Put aside.
To cook the chicken:
Heat 1 tablespoon vegetable oil in a large skillet or wok over medium heat.
Add the marinated chicken and cook for 3-4 minutes until almost cooked and lightly browned.
Remove the chicken from the pan and set aside.
Stir-fried vegetables:
Add another tablespoon of oil to the pan.
Add the chopped garlic and ginger and cook for 30 seconds until fragrant.
Add broccoli florets and carrots. Cook, stirring, until the vegetables soften, about 4-5 minutes.
Assembling tools:
Return chicken to roasting pan.
Pour the sauce mixture over the chicken and vegetables.
Mix everything together and cook for another 2-3 minutes; allow the sauce to thicken slightly and coat evenly.
Coating and serving:
Sprinkle with sesame seeds and fried onions, if desired.
Serve hot fries over steamed or fried rice.
