Quinoa has a light, delicate and somewhat nutlike taste. It cooks up fluffy and adds texture and crunchiness to almost any dish. Not only is it high in protein, it includes many essential amino acids. No wonder some (me included!) people consider it the perfect food!
I have to get on my soapbox for a minute here. I know some people think I’m crazy for my love affair with quinoa. You can see them turn their nose up a little when I mention it. Here’s the thing about quinoa, like everything else in life, quality matters. This is especially true when it comes to quinoa. If you get the wrong kind of quinoa, it will ruin you for life. You need the right quinoa to make this recipe a hit. My favorite quinoa is TruRoots Quinoa.

Ingredients
1 cup (dry) Quinoa
2 cups chicken broth
1 cup pizza sauce
2 cups shredded Mozzarella cheese
Your favorite pizza toppings.
Instructions
Preheat oven to 375°F.
Cook quinoa in the chicken broth according to package instructions
When the quinoa is done, fluff the quinoa with a fork.
Stir about 1/2 cup pizza sauce into the quinoa until well combined, set aside.
Lightly spray 8 large (10-ounce) oven-safe ramekins with cooking spray and place them on a large baking tray.
Layer each with about 1/4 cup of quinoa mixture, and press down gently
spread a thin layer of pizza sauce over the quinoa
Sprinkle a layer of shredded Mozzarella on top of the quinoa.
Pile on your pizza toppings
Top with another layer of mozzarella.
Bake for 15-20 minutes, or until the cheese is melted and the ingredients are heated through.
Serve immediately.
