I love pizza. I could eat it for every meal, every day. My jeans, however, would rather I not. It took a while to figure out how to balance my love for pizza with my love for fitting into my clothes. Turns out the answer was quite simple. Quinoa. Putting my favorite pizza toppings on top of a superfood like quinoa was the perfect compromise and exactly what I need to be able to have my pizza and eat it too. Quinoa is my absolute favorite superfood.
The best thing about this recipe is that it’s so versatile, just like pizza! You can add whatever ingredients you want to make it your own. We have started doing this for pizza nights. Each family member starts with their bowl of quinoa and adds some sauce, their favorite toppings and of course cheese. Then we throw it all in the oven, bake it up, serve it with a salad and voila! An easy, good for you, skinny jean approved dinner that the whole family will love.
