Put cornstarch in the caramel, no baker wants you to know the recipe

1 cup of sugar (200 grams)
1 cup of water
20 grams of cornstarch (cornstarch)
50 milliliters of water
2 tbsp unsalted butter
Procedure
We heat a frying pan over medium heat and add the sugar and mix well until we see that the sugar has completely melted.
Then in a cup we add the cornstarch and water and dissolve well with the help of a spoon and set it aside.
When the caramel is ready, we add a cup of water.
We will see that the caramel begins to stick but let’s not worry because we continue mixing and the caramel will come off.
Cover so the caramel melts faster while stirring occasionally to prevent sticking. In approximately 8 minutes it should be ready.
Add the unsalted butter and mix well and add the dissolved cornstarch and stir constantly for 4 minutes over low heat.
We already have our candy.
Additional Tips
Use a heavy-bottomed pan to prevent the sugar from burning and cook evenly.
Once the sugar has dissolved, avoid stirring it too much to prevent crystallization. If necessary, use a damp silicone spatula or gently shake the pan.
Store the candy in an airtight container to keep it fresh and prevent it from getting soggy.
Making caramel can be a challenge, but practice and patience will help you perfect the technique.
