Wet Ingredients:
Pumpkin puree: 1 can (15 oz) 🎃
Granulated sugar: 1 cup
Brown sugar, packed: 1/2 cup
Large eggs: 2 🥚
Vegetable oil: 1/2 cup
Vanilla extract: 1 tbsp
Cream Cheese Swirl:
Cream cheese, softened: 8 oz
Granulated sugar: 1/4 cup
Large egg yolk: 1 🥚
Vanilla extract: 2 tsp
Directions:
Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
In a medium bowl, whisk together flour, pumpkin pie spice, baking soda, and salt.
In a large bowl, mix together pumpkin puree, sugars, eggs, oil, and vanilla until smooth.
Gradually add dry ingredients to the pumpkin mixture, stirring until just combined.
Fill each muffin cup about 3/4 full with batter.
