Pork Fillet Rolls with Bacon and Prunes

- Remove the silver skin from the pork fillet and trim any excess fat.
- Cut the fillet in half lengthwise, then cut each piece in half again.

- Make incisions in the thickest parts of the meat to ensure even thickness.
- Cover the pieces with cling film and pound with a kitchen hammer until flat.
- Season both sides of the meat with salt, pepper, and your favorite spices.

- Lay the bacon slices over the meat, then sprinkle chopped rosemary on top.
- Wash and dry the prunes, then cut them into small pieces and arrange over the bacon.
- Tightly roll the meat and secure with wooden skewers.

- Heat a well-oiled pan and sear the rolls over high heat for 1-2 minutes until browned on all sides.
- Transfer the rolls to a baking sheet lined with parchment paper.
- In a small bowl, mix 1 tsp whole grain mustard, 3 tsp soy sauce, and 1 tbsp sweet chili sauce.
- Brush the meat rolls with the sauce mixture.
- Bake in a preheated oven at 180°C (356°F) for 10 minutes.
