Mini Meatloaf Muffins
Ingredients:
For the Meatloaf:
1 lb ground beef (or a mix of beef, pork, or turkey)
1/2 cup breadcrumbs
1/4 cup milk
1 small onion, finely diced
1 small bell pepper, finely diced
2 cloves garlic, minced
1 large egg
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup shredded cheddar cheese (optional)
For the Topping:
1/4 cup ketchup
1 tablespoon brown sugar
1 teaspoon mustard (optional).
