MINI BAILEY’S CHEESECAKES

2 packages (16 ounces each) cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1/4 cup Bailey’s Irish Cream
1 teaspoon vanilla extract
For the Bailey’s Ganache:
1/2 cup semi-sweet chocolate chips
1/4 cup heavy cream
2 tablespoons Bailey’s Irish Cream
Instructions
1. Preparing the Crust
Start by preheating your oven to 325°F (163°C). In a bowl, combine the crushed chocolate graham crackers, melted unsalted butter, and granulated sugar. Mix until the ingredients are well combined and resemble a coarse, sandy texture.

Press this mixture firmly into the base of each mini cheesecake mold, creating a uniform crust. Bake in the preheated oven for 8-10 minutes or until the edges turn golden brown. Allow the crusts to cool while you prepare the cheesecake filling.
