In a saucepan, add tomatillos, serrano peppers, onion, and garlic. Cover with water and bring to a boil. Simmer for about 10 minutes until softened. Drain and blend until smooth. Stir in chopped cilantro and season with salt to taste.
Cook the Meat:
In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant.
