Lemon and Raspberry Layer Cake Recipe
Ingredients
For the Cake:
2 1/2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs
1 tablespoon lemon zest
1/4 cup fresh lemon juice
1 teaspoon vanilla extract
1 cup buttermilk.
For the Raspberry Frosting:
1 cup unsalted butter, softened
4 cups powdered sugar
1/4 cup raspberry puree (made from fresh or thawed frozen raspberries)
1 teaspoon vanilla extract
Pink food coloring (optional).
For Decoration:
Fresh lemon slices
Fresh raspberries
Mint leaves.
