Kielbasa Sheet Pan Meal

There isn’t a lot of prep work for this recipe, which is part of the reason I love it! Most of the work with this recipe is chopping the ingredients.

Start by peeling, washing, and chopping 3 really large potatoes into small cubes. It is important to chop the potatoes into small cubes all about the same size, so that they cook evenly.

Slice two packs of Beef Kielbasa into thin rounds and chop the green peppers and onion into evenly sized pieces.

Make Kielbasa Sheet Pan Meal

Start by adding the chopped potatoes to a large bowl. Add 2 tbsp of olive oil and season with salt, pepper, garlic powder, and paprika. I don’t use exact measurements for this recipe.

Toss the bowl of potatoes until the potatoes are well coated in seasoning.

Next, add the chopped green peppers and onions to the bowl of the potatoes. Add just a little bit more of the olive oil and the seasonings. Stir or toss everything together well.

Spray a large sheet pan with cooking spray and pour the seasoned veggies out onto the pan. Top the vegetables with the sliced kielbasa.

This easy sheet pan meal will bake at 400 degrees for about 30-40 minutes. I suggest checking it at about 30 minutes and baking it for longer if needed. Mine ended up cooking for at least 40 minutes, but all ovens cook differently. It also depends on how small you ended up cutting the potatoes.

For crispier potatoes, you can spread this out between two large sheet pans and stir a couple of times while it cooks.

Serve the Sheet Pan Meal

Once the kielbasa and veggies are cooked to your liking, it’s time to eat! This is great served as is, but my wife and I really like it topped with a little bit of Buffalo Wild Wing’s Asian Zing sauce and some chopped green onions.

The sauce is spicy, so my kids used some BBQ sauce with theirs instead.

The leftovers reheated well and made an easy lunch for the next day!
