Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
Prepare the Dry Ingredients:
In a large bowl, whisk together the rolled oats, whole wheat flour, baking soda, ground cinnamon, and salt.
Prepare the Wet Ingredients:
In a separate bowl, whisk together the melted coconut oil, honey or maple syrup, egg, vanilla extract, and unsweetened applesauce until well combined.
Combine Ingredients:
Add the wet ingredients to the dry ingredients and stir until just combined. If desired, fold in the raisins or chocolate chips and chopped nuts.
Scoop the Dough:
Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake the Cookies:
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers are set.
Cool the Cookies:
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Tips:
For chewier cookies, do not overbake them.
You can store the cookies in an airtight container at room temperature for up to 5 days.
