Ham and Bean Soup

Instructions:

1. In a large pot, heat some oil over medium heat. Add the chopped onion, carrots, celery, and garlic. Sauté until the vegetables are softened, about 5 minutes.

2. Add the diced ham to the pot and cook for an additional 2-3 minutes to lightly brown it.

3. Add the soaked and drained beans to the pot, along with the bay leaf and dried thyme. Stir everything together.

4. Pour in the chicken or vegetable broth, ensuring that the beans are fully submerged. Bring the soup to a boil over high heat.

5. Once the soup reaches a boil, reduce the heat to low and cover the pot. Simmer the soup for about 1.5-2 hours, or until the beans are tender and cooked through. Stir occasionally and check for any foam or impurities that may rise to the surface, skimming them off if necessary.

6. Once the beans are cooked, taste the soup and season with salt and pepper according to your preference. Discard the bay leaf.

7. If you prefer a thicker consistency, you can use an immersion blender to partially puree some of the beans and vegetables in the pot. This step is optional and can be done to your desired level of thickness.

8. Ladle the soup into bowls and garnish with freshly chopped parsley. Serve hot and enjoy!
