First, cook bacon however you like making it! I prefer to bake it in the oven on a sheet pan lined with parchment paper at 400 degrees F for 20-25 minutes.

Once the bacon is cooked, drain the grease, chop it into small pieces and set it aside.

Next, boil cheese tortellini on the stove following the directions on the package. Drain and rinse with cold water and set aside.

In a large bowl, mix together mayo, red wine vinegar, salt, oregano, Italian seasoning, garlic powder, and red pepper flakes. Stir well.

Tortellini

Add cooked cheese tortellini, pepperoncinis peppers, 1/3 cup Parmesan cheese, the chopped red onion, sliced tomatoes, and chopped bacon.

Stir everything together well.

Once the pasta salad is all combined refrigerate for at least an hour and serve! Enjoy!

  • I used a 19oz bag of frozen cheese tortellini.
  • I love the bacon in this recipe, but you could swap that out for some chopped pepperoni and/or chopped salami.
  • I used pepperoncinis, but you could use banana pepper slices if you like them better.

Ingredients

  • 1 cup of mayo
  • 2 TBSP of red wine vinegar
  • 1/2 tsp of salt

  • 1 heaping cup grape tomatoes sliced
