Greek Black-Eyed Bean Salad

Ingredients

  • 1 cup  black-eyed beans, dried (or 2 cans, drained and rinsed)
  • 1/2  red onion, finely chopped
  • 1 cup cherry tomatoes, halved or quartered
  • 1 red sweet pepper, diced
  • 1/2 cup pickled cucumbers, diced
  • 1/4 cup fresh parsley, finely chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon apple cider vinegar
  • Juice of 1 lemon
  • Salt and pepper, to taste
