Greek Black-Eyed Bean Salad
Ingredients
- 1 cup black-eyed beans, dried (or 2 cans, drained and rinsed)
- 1/2 red onion, finely chopped
- 1 cup cherry tomatoes, halved or quartered
- 1 red sweet pepper, diced
- 1/2 cup pickled cucumbers, diced
- 1/4 cup fresh parsley, finely chopped
- 2 tablespoons extra virgin olive oil
- 1 tablespoon apple cider vinegar
- Juice of 1 lemon
- Salt and pepper, to taste
