Instructions:

Prepare the Oven and Pan:
Preheat your oven to 325°F (163°C).
Grease a 9×13 inch baking dish or line it with parchment paper.
Make the Crust:
In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter.
Press the mixture evenly into the bottom of the prepared baking dish.
Bake the crust for 10 minutes. Remove from the oven and let it cool while you prepare the filling.

In a large mixing bowl, beat the cream cheese until smooth and creamy.
Add the sugar and vanilla extract, and beat until well combined.
Add the eggs, one at a time, beating well after each addition.
Mix in the sour cream and heavy cream until the filling is smooth and well combined.

Pour the filling over the baked crust, spreading it evenly with a spatula.
Bake the Cheesecake:
Bake in the preheated oven for 45-50 minutes, or until the center is set and the edges are lightly golden.
Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about 1 hour.
Cool and Chill:
Remove the cheesecake from the oven and let it cool to room temperature.
Refrigerate the cheesecake for at least 4 hours, or overnight, before serving.
