Ingredients

1/2 cup rice vinegar (or apple cider vinegar)
1/2 cup ketchup
1/3 cup brown sugar
1/4 cup soy sauce
1/4 cup pineapple juice (optional for extra sweetness)
2 tablespoons cornstarch
1/4 cup water.

Instructions

Mix the Sauce Ingredients:
In a medium saucepan, combine the rice vinegar, ketchup, brown sugar, soy sauce, and pineapple juice (if using).
Stir well to combine all the ingredients.
Prepare the Cornstarch Slurry:
In a small bowl, mix the cornstarch and water until smooth.
Cook the Sauce:
Heat the saucepan over medium heat and bring the mixture to a gentle boil, stirring constantly.
Slowly add the cornstarch slurry to the saucepan, stirring continuously.
Cook for about 3-5 minutes, or until the sauce has thickened to your desired consistency.
Adjust Seasoning:
Taste the sauce and adjust the sweetness or tanginess to your liking by adding more sugar or vinegar if needed.
Serve:
Remove from heat and let cool slightly before serving.
Use as a dipping sauce for spring rolls, egg rolls, chicken nuggets, or as a sauce for sweet and sour chicken or pork.
