Ingredients:

For the Patties:
Chickpeas: 1 cup, cooked (can use canned or dried chickpeas soaked overnight and boiled)
Egg Yolks: 3
Red Bell Pepper: 1/4 cup, finely chopped
Fresh Parsley: 1/4 cup, finely chopped
Olive Oil: For frying
Salt and Pepper: To taste
For the Yogurt Dip:
Greek Yogurt: 1 cup
Fresh Dill: 1 tablespoon, chopped
Garlic: 1 clove, minced
Lemon Juice: 2 teaspoons
Salt and Pepper: To taste.

Instructions

1. Prepare the Chickpeas:
If using dried chickpeas, soak them overnight and boil until tender. If using canned chickpeas, rinse and drain well.
2. Make the Patties:
In a bowl, mash the cooked chickpeas until mostly smooth.
Add the egg yolks, chopped red bell pepper, parsley, and a pinch of salt and pepper. Mix until combined.
Form the mixture into small patties.
3. Cook the Patties:
Heat a skillet over medium heat and add a splash of olive oil.
Fry the patties for 3-4 minutes on each side, or until they are golden brown and crispy on the outside.
4. Prepare the Yogurt Dip:
In a small bowl, combine the Greek yogurt, chopped dill, minced garlic, lemon juice, and season with salt and pepper to taste. Stir until well mixed.
