Chicken Salad with Grapes

How to make this chicken salad recipe with grapes:

We’ll start with some already cooked and shredded chicken. You can use a rotisserie chicken or start with my crockpot shredded chicken.

Add your chicken, grapes, celery, pecans, and red onion to a mixing bowl and then top it off with a dollop of mayonnaise. You could use Greek yogurt if you prefer.

Sprinkle on some fresh parsley, salt, and pepper.

Stir this mixture together to combine.

I like to let my chicken salad hang out in the fridge for an hour or so before eating, but it’s totally fine to dig in right away if you’re in a rush.

This chicken salad with grapes is seriously so good on a nice buttery croissant. I’ve also been known to scoop it up with Ritz crackers and eat it that way.

Ingredients

▢2 cups cooked shredded chicken
▢½ – 2/3 cup mayonnaise
▢½ cup chopped celery
▢½ cup grapes halved
▢1/3 cup pecans chopped
▢¼ cup red onion diced
▢2 tablespoons chopped parsley
▢1 teaspoon salt
▢½ teaspoon cracked pepper
▢4 Croissants

Instructions

Add the chicken, 1/2 cup of mayonnaise, celery, grapes, pecans, onion, parsley, salt, and pepper to a mixing bowl and stir well to combine.
Add additional mayonnaise if you’d like a wetter consistency.
Store covered in the fridge for 1 hour to allow the flavors to meld before serving.
Divide evenly between 4 croissants.
Tips & Notes:
Store leftovers in the fridge, tightly covered, for up to 3 days.
Swap in Greek yogurt for the mayonnaise as desired.
