Ingredients:
4 cups broccoli florets (fresh or frozen)
1 cup carrots, diced or julienned
1 cup celery, diced
1 onion, diced
3 cloves garlic, minced
4 cups chicken or vegetable broth
2 cups whole milk or half-and-half
2 cups sharp cheddar cheese, shredded
1/4 cup butter
1/4 cup all-purpose flour
Salt and pepper to taste
1/4 teaspoon nutmeg (optional, for added warmth)
1/2 teaspoon paprika (optional, for a little kick).
