Instructions
Prepare the Filling:
In a small bowl, combine the softened cream cheese, sugar, and vanilla extract. Mix until smooth and well combined.
Assemble the Pastries:
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Roll out the puff pastry sheet on a lightly floured surface to smooth out any creases.
Cut the puff pastry into 9 equal squares.
Place about 1 tablespoon of the cream cheese mixture in the center of each square, then top with a few blueberries.
Fold two opposite corners of each square over the filling to the center, pressing gently to seal.
Bake the Pastries:
Transfer the pastries to the prepared baking sheet.
Brush the tops with beaten egg and sprinkle with coarse sugar if desired.
Bake for 15-20 minutes, or until the pastries are golden brown and puffed.
Cool and Serve:
Allow the pastries to cool slightly on the baking sheet before transferring them to a wire rack to cool completely.
Serve warm or at room temperature.
