Birria Wings with Consommé

Preparation:

  1. Prepare the Glaze:
    In a small bowl, combine the sweet chili sauce, soy sauce, hot chili-garlic sauce, sesame oil, and freshly grated ginger. Whisk until the mixture is well-blended.
  2. Prepare the Chicken Wings:
    Trim any excess skin from the edges of the chicken wings. Lightly coat the wings with vegetable oil, then season them with kosher salt and freshly ground black pepper to taste.
  3. Grilling Instructions:
    Preheat the grill to a medium heat. Place the chicken wings over direct heat and grill until the skin starts to crisp, approximately 10 minutes. Turn the wings once or twice during this process to ensure even cooking.
  4. Applying the Glaze:
    Once the wings begin to crisp, brush them with the prepared glaze. Continue grilling until the meat is fully cooked and no longer pink at the bone, approximately 8 to 10 additional minutes. Turn and brush the wings with the glaze 2 to 3 more times during this process to enhance flavor.
  5. Serving:
    Serve the wings warm, ideally with a side of consommé for dipping.

Alternate Cooking Method:

If you prefer baking, preheat your oven to 375°F (190°C). Bake the wings for 45 minutes, then apply the glaze. Increase the oven temperature to 400°F (200°C) and bake for an additional 20 minutes, or until the skin is golden brown and the glaze has thickened.
