Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, combine mashed bananas, rolled oats, blueberries, honey/maple syrup, vanilla extract, cinnamon, and a pinch of salt. Mix well.
Drop spoonfuls of the mixture onto the prepared baking sheet, flattening slightly to form cookies.
Bake for 15-18 minutes, until the edges are golden brown.
Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
NOTES
For a vegan version, ensure to use maple syrup instead of honey.
These cookies can be stored in an airtight container for up to a week.
