Vegan granola Cups

Ingredients:

For the Granola Cups:

  • 2 cups rolled oats (gluten-free if needed)
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup almond flour or ground almonds
  • 1/4 cup coconut oil, melted
  • 1/4 cup pure maple syrup or agave syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt

For the Filling:

  • Your choice of vegan yogurt, fruit compote, fresh fruits, or nut butter.
